Chocolate Chocolate Cupcakes

Sure, I like to make homemade cakes and cupcakes from scratch, but I also like to mix together a box that Betty Crocker has prepared for me with some eggs, oil, and water and have cake in 20 minutes that I know will come out well.  Especially when I am giving the cupcakes to someone else for their birthday.


One thing that I will not do is put canned frosting on a cake.  Never ever.

Make this icing instead.  It's practically as easy as opening a can anyway.

CHOCOLATE ICING

1 stick of butter
1/4 c. cocoa powder
2 1/2 c. powdered sugar
1 tsp. vanilla
3 Tbsp. whipping cream
pinch of salt

Bring butter to room temperature.  With electric mixer combine butter, cocoa, and sugar.  Add in vanilla and enough cream to reach desired consistency.  Add pinch of salt.


**This is by no means an exact recipe--you know what that means?  You have to dip your finger in there often and taste test...too bad huh? :)

Yes they were quite the hit with the hundreds of people jammed into the single metro car. Austin's arm was pretty tired holding them above his head the whole way :)

they really are easy...you could be fancier than me and make your own cake if you wanted...or you could just tell people that you did ;)
