Reubens


You know what's great?  Sandwiches.  You know what's better than sandwiches?  Grilled sandwiches.  Know why?  'Cause somehow the mere fact that the cheese is melted and the bread is crispy transforms this lunchtime option into a completely viable dinner choice.

Plus they're easy.

The other day when we were at the grocery store, I thought I got all of the right ingredients for a reuben.  Turns out I got pretty much everything wrong except the sauerkraut.  Anyway, here is my version that was equally delicious :)
REUBEN

Sliced Pumpernickel Bread
Deli Roast Beef
Provolone Cheese
Sauerkraut
Thousand Island Dressing
Butter

Butter the outsides of the bread.  Layer with meat, cheese, sauerkraut and dressing.  Grill on a skillet until cheese is melted and the bread is nice and crispy!

yep found that out later...it was very good this way though too. in my defense, we already had the provolone cheese and target didn't have any corned beef. the pumpernickel bread was just purely a mistake though.

Even I know that's completely wrong. You can make corn beef and it's even better than the deli. I found a recipe for the crock pot and it was delicious and then you can make real Reubens.

6 carrots peeled and chopped and 1-2 onions chopped in large pieces in the bottom of the crock pot. Put in your corn beef on top of that. Pour a 12oz. beer over the top. Spread the seasoning packet over the top of the corn beef with 2-3 Tbs. grainy mustard of any kind. Then mix 1/3c. brown sugar with 1c. water and pour slowly over the top. Cook on low for 10-12 hours. If you want to add cabbage, quarter it, and throw it in for the last 30-60 minutes.

that sounds good too...i need to get a bigger crockpot for that though.

even though it was completely wrong...it was delicious - maybe i was just really hungry not eating until 8:30 that night :)
